MSG (found in almost all your favorite processed and restaurant foods,
esp fast food) Linked To Weight Gain
Monosodium glutamate (MSG) is linked to weight gain and obesity, according to a study
published in the August 2008 issue of Obesity.
According to the study, people who use MSG as a food flavor enhancer are more likely to be
overweight or obese then those who don’t, even with equal amounts of calorie intake and physical
activity.
Researchers at the University of North Carolina (UNC) at Chapel Hill School of Public Health
studied the food preparation habits of more than 750 40- to 59-year-old men and women in three
rural villages in China. Of those, 82% used MSG in their food, and the participants who used the
most MSG were three times more likely to be overweight than non-users.
“We found that prevalence of overweight was significantly higher in MSG users than in non-users,”
said Dr. Ka He, assistant professor of nutrition and epidemiology at UNC. “We saw this risk even
when we controlled for physical activity, total calorie intake and other possible explanations for the
difference in body mass.
MSG is a powerful flavor enhancer added to TONS of processed and restaurant foods, especially
fast food. MSM has been found to damage the hypothalamous interfering with appetite control
(causing overeating), and cause insulin resistance which is what is causing the weight gain and
can lead to type 2 diabetes. MSM is also known to be addictive which is what keeps us coming
back for more!!!
Manufactures KNOW that many consumers are on the lookout for MSG on the label so they
have cleverly hidden MSG inside numerous ingredients:

Men, Eat your Broccoli
Broccoli can help reduce prostate cancer risk.... AND can reverse diabetic heart damage, say
researchers.
A UK study has found consuming broccoli can reverse damage caused to the heart blood vessels
of diabetics due to the presence of a sulfur compound. Researchers from the University of
Warwick concluded the compound could function as a “dietary activator”, and thereby “prevent
biochemical dysfunction and related functional responses of endothelial cells induced by
hyperglycemia (elevated blood sugar levels)”.
Endothelial cells are those that form a thin layer on the interior of blood vessels. Their dysfunction
is a major cause of morbidity and mortality among diabetics and has also been linked to
problems such as kidney disease.
Lead researcher Professor Paul Thornalley and his colleagues found the compound –
sulforaphane – provoked production of a protein called nrf2 that was beneficial to blood vessel
health, even those damaged by elevated blood sugar levels.
Thornalley’s team observed a 73% reduction of Reactive Oxygen Species (ROS), which are
commonly known as free radicals. ROS levels have been known to increase by as much as 300%
in diabetics.
“Our study suggests that compounds such as Sulforaphane from broccoli may help counter
processes linked to the development of vascular disease in diabetes,” said Thornalley.

Certain kinds of sweeteners -- such as date sugar and dark brown sugars -- may help
manage type 2 diabetesand related complications
"Depending on their origin and grade of refining, many sweeteners contained significant amounts
of antioxidants, which have the potential to control diabetes-linked high blood pressure and heart
disease," Kalidas Shetty, of the University of Massachusetts Amherst, said in a university new
release. "Several types of sweeteners also showed an interesting potential to inhibit the action of
a key enzyme related to type 2 diabetes, which is also the target of drugs used to treat this
condition."
The researchers analyzed a wide variety of sweeteners and found that date sugar and dark brown
sugars contained much higher levels of antioxidants called phenolic compounds than white sugar.
Phenolic compounds are the same plant chemicals that give red wine and tea their heart-healthy
benefits.
The researchers also found that certain sweeteners inhibit the activity of alpha-glucosidase, an
enzyme that moderates blood glucose levels by controlling the passage of sugars from the small
intestine.
These findings were published recently in the Journal of Medicinal Food
"Replacing sugars in processed foods and beverages with low-calorie and noncaloric sweeteners
is one long-term strategy for type 2 diabetes," Shetty said. "But these results indicate that a
strategic choice of dietary sweeteners, especially less refined sugars close to the original nature
of the ingredients found in whole plants, also has potential in managing type 2 diabetes and
related complications. This provides a strong rationale for further animal and clinical studies for
better diet design."
Chip Companies Settle Acrylamide Lawsuit
Heinz, Frito-Lay, Kettle Foods and Lance Inc have agreed to slash levels of the cancer-causing
chemical acrylamide in their potato chips and French fries, settling a lawsuit against them.
California’s attorney general had sued a number of French fry and potato chip companies under
an act which requires companies to post warnings of any cancer-causing chemicals in their
products, unless they can prove that the levels do not pose a significant health risk.
Acrylamide is a by-product of frying, roasting and baking foods that contain certain amino acids
and in 2002, Swedish scientists discovered high levels of cancer-causing acrylamide in fried
potato products.
The legal action began in 2005 when the attorney general sued McDonald’s, Wendy’s, Burger
King, KFC, Frito-Lay, Kettle Foods, Lance, Procter & Gamble and Heinz, for selling potato chips
and French fries containing high levels of acrylamide.
Now California Attorney General Edmund G Brown Jr said that the lawsuits against Heinz,
Frito-Lay, Kettle Foods and Lance had been settled as they agreed to reduce “this carcinogenic
chemical” in fried potatoes. He added: “Other companies should follow this lead and take steps to
reduce acrylamide in French fries and potato chips.”
It follows restaurant chains including KFC, McDonald’s, Wendy’s and Burger King which last year
agreed to post acrylamide warnings at their restaurants and to pay civil penalties and costs
Then in January, Procter & Gamble agreed to reduce acrylamide in Pringles potato chips by
50% so that no warning would be required.
In July an agreement was reached with Heinz, the manufacturer of Ore-Ida frozen French fries and
tater tots, to pay $600,000 in penalties and costs and change its fried potatoes to contain 50%
less acrylamide.
Preventative measures
California has stringent laws relating to chemicals known to the state to cause cancer or
reproductive toxicity and that consumers should not be exposed to them without giving clear and
reasonable warning. But the settlements reflect the growing importance of paying attention to
acrylamide for food manufacturers in general, especially given developments in finding solutions.
The settlement
A trial date had been scheduled for July 28, but these latest settlements mark the end of the
state’s litigation. As a result, Frito-Lay, which is responsible for most of the potato chips sold in
California, Kettle Foods, maker of “Kettle Chips,” and Lance, maker of Cape Cod Chips have
agreed to reduce acrylamide over a period of three years to 275 parts per billion.
For Frito Lay, this is about a 20% reduction, while for Kettle Chips, which contain far more
acrylamide, this is an 87% reduction in acrylamide.
Most Cape Cod chips are already near the compliance level, but one product, “Cape Cod Robust
Russets”, contains over 7,000 parts per billion of acrylamide, and immediately will either carry a
warning label on the package or will be removed from the market.
Frito-Lay will pay $1.5 million in penalties and costs, $550,000 will be forgiven if it can reduce
acrylamide in its products in half the time required by the settlement. It will pay an additional $2
million if it fails to reduce acrylamide in the required time. Kettle Foods will pay $350,000 in
penalties and costs, while Lance will pay $95,000 in fees and costs.
The US FDA is studying the problem of acrylamide in fried potatoes but has not taken formal
action.
Chip companies settle acrylamide lawsuit
IN BETH'S KITCHEN
Chicken Enchiladas
Place in crockpot:
Two large organic chicken breasts
1/2 large red onion, chopped
2 cloves garlic, chopped
2-3 Jalapenos--- fresh (or canned), chopped
cayenne pepper
sea salt
taco seasoning - no MSG!!!
about 6 ounces enchilada sauce (I use a chipolte one I get at the health food store)
couple tablespoons of water
After about 4 hours on low, it should be ready to shred with a couple of forks.
Then, add about 1/2 cup sour cream and 1/2 to 1 can of organic black beans
(rise salt off if using canned).
Also need:
tortillas
enchilada sauce
grated cheese
Preparation:
Assemble Enchiladas in 9 x 13 pan: (I use glass. Non-stick teflon causes cancer!)
Pour some enchilada sauce in bottom of pan, lay tortilla down flat and put a row of shredded
chicken topped with cheese and roll up and move to edge. Continue until pan is full. Top with
remaining sauce (should cover all the tortillas or they get dried out) and then cheese.
Bake at 350 degrees, Cover with foil for first 30 minutes.
Remove foil for last few minutes to brown cheese slightly.
Garnish top with finely shredded romaine lettuce, peppers, salsa and sour cream
(Can do the same thing with an organic beef roast to make shredded beef! - except I would
probably skip the sour cream.)
