California is First U.S. State to Ban Trans Fats
SACRAMENTO, Jul 25, 2008 (UPI via COMTEX) -- California Gov. Arnold Schwarzenegger says
a bill banning trans fats in restaurant food by 2010 will lead to a "healthier future for California."
"Consuming trans fat is linked to coronary heart disease, and today we are taking a strong step
toward creating a healthier future for California," the former body-builder said Friday as he signed
the bill in Sacramento.
The measure is the first of its kind in the nation and bans restaurants from cooking with artificial
trans fats starting in 2010 and from baked goods the following year.
Trans fats have been popular in the restaurant business due to their long shelf life; however
customer sentiment in recent years has had them on the decline, the Los Angeles Times said.
The Center for Science in the Public Interest said in a written statement that it hoped the measure
would encourage the federal government to ban trans fats nationwide. URL:

Trans fats are found in partially hydrogenated oil products like margarine and crisco and are
commonly found in crackers, sweets, snacks, baked goods, even processed meats, etc. They
are known to increase risk of heart disease much more than eating natural fats like butter and
olive oil. Please discard your crisco, margarine and other man-made fats. That stuff is an
abomination in God's eyes!!!
Almonds Demonstrate Prebiotic Potential
Almonds are known for their high vitamin E and mineral content and cholesterol-reducing and
diabetes-combating potential but new research indicates they have a prebiotic effect. Prebiotics
are a category of functional food, defined as: Non-digestible food ingredients that beneficially
affect the host by selectively stimulating the growth and/or activity of one or a limited number of
bacteria in the colon, and thus improve host health.
Funded by the Almond Board of California, the researchers found that almond powder significantly
increased levels of certain gut flora. As a result prebiotic effects were increased. The study,
published in the July '08 edition of Applied and Environmental Microbiology, found the prebiotic
effect did not occur when the fat content was removed from the almond preparation, indicating
lipid concentration is key to activating the prebiotic reaction.
Institute of Food Research scientists led by Dr Guisy Mandalari used a Model Gut to simulate the
physical and biochemical conditions of the gastro-intestinal tract so that the almonds experienced
an environment similar to that of the stomach and the small intestine.
Digested almonds were then mixed with an in vitro batch system to mimic the bacterial
fermentation in the large intestine. The populations of intestinal bacteria were then monitored.
"The results show a prebiotic effect of finely ground almonds (with lipid) but not with defatted
almonds," Mandalari said. For the finely ground almonds with lipids, the study recorded a
significantly increased population for bifidobacteria and Eubacterium rectale, "resulting in a higher
prebiotic index (4.43) compared with the commercial prebiotic fructo-oligosaccharides (4.08) at
24h incubation."

Some JUICE Tips/Info
While I am not a huge fan of juicing and drinking juice in general, I wanted to point out of of the
benefits of some of the new juices hitting the marketplace. Before I continue... the reason I am not
a juice fan is because of the concentrated sugars that result when the fiber is removed from the
whole food to make the juice. Removing the fiber (that God put in with purpose) greatly changes
the way the body responds to consuming the food. The glycemic index greatly increases, as does
the calories per serving. Also, because minerals are bound to the fiber, minerals are lost when the
fiber is removed.
With that said, there are some interesting exotic fruits now available to us that are extremely high
in antioxidants which we so need in in our diet today. But, because of the high level of
antioxidants, these fruits are extremely tart. Antioxidants are, almost without exception, bitter, acrid
or astringent. The more antioxidants you have in a food, the more bitter it is going to be. WHY?
Antioxidants are meant to protect the plant by making it taste bad to predators
So, when shopping for these high antioxidant juices, you will often see them combined with other
sweet juices like apple or white grape. These, while making the juice more palatable, are diluting
the antioxidant concentration AND increasing the glycemic index. Personally, I would look for
100% concentrates and then dilute them with water and add stevia (liquid is best) to sweeten to
your liking.
Always be careful of juice "drink" or "beverage" products... these may contain as little as 10
actual juice and contain really nasty ingredients like high fructose corn syrup!!! yuk!
Eat THESE... Weigh Less?!!! BEANS!!!!
Maybe they’re called "magical fruit" in children’s rhymes for a reason . . .
Just not for the flatulence-producing reasons kids obsess about. What really makes beans
magical is their potential effect on your waistline: Bean eaters weigh less on average than
non-bean-imbibing folks do.
In fact, bean eaters weigh as much as 6.6 pounds less, according to RealAge expert John La
Puma, MD, author of ChefMD's Big Book of Culinary Medicine. Makes sense when you consider
beans are full of fiber and protein but low in fat, which means a serving will keep you going far
beyond the need-to-munch hour but only make a minor dent in your calorie intake. Beans
(especially the dark colored ones) also are very high in antioxidants.
In case you are wondering HOW to lesson the gas that often accompanies bean eating.... CHEW
your beans. Digestion of the complex carbohydrates in beans starts in your MOUTH. If you skip
this step... all the work must be done in the intestinal tract which can overburden it, resulting in gas!

Spinach and strawberries!!!
Did you know you can boost the iron uptake in the spinach by combining it with strawberries?
Spinach and Strawberry Salad
2 bunches spinach, rinsed and torn into bite-size pieces
place in large bowl and gently toss
Make dressing in separate bowl. Wisk togther and pour over salad. Gently toss and serve.
4 cups sliced strawberries
1/3 cup olive oil
1/2 cup white wine vinegar
stevia... few drops to taste
(I use the liquid - plain or lemon)
1/2 teaspoon paprika
1 tablespoon poppy seeds
Optional:
Slivered raw or toasted almonds
Black Bean Dip
(Good Hot or Cold!)
Chopped onion and various peppers of your choice... (I use lots of hot ones!) you can saute these,
broil or grill them... your choice. After they are grilled or boiled, you may want to chop them up a
little bit more before adding to beans.
(Grilled or broiled gives the best flavor if you have time)
(add olive oil and sea salt before cooking)
Preparation:
Mix together on stove top:
One large can organic black beans... or soak and cook your own.
Add prepared peppers and onions to beans.
Taco seasoning (look for brands with no MSG)
Cayenne pepper to taste
Sea salt
Bragg's aminos
Cumin
Dried black bean flakes to thicken
Can also add any kind of salsa you have on hand.
Season to your liking... hot, medium, mild.
Serve with organic corn chips, salsa, sour cream and even chopped romaine lettuce.
If serving for a party... after preparing on stove, put in oven baking dish... top with cheese and
jalapenos and warm in oven until the cheese is melted. The baking dish will help keep the beans
warm longer.
Ideas for left overs:
Spread some black bean dip over a tortilla, sprinkle on some cheese and jalepenos... warm in
oven for 10 minutes or so and you got your self a mini mexican pizza! serve with salsa and sour
cream.

Tip on buying sour cream....always buy organic dairy and look for brands that are naturally
cultured so it contains natural probiotics... we don't seem to get enough of these little guys in our
diet... plus they help you digest the beans!!! (-:
