Vegetable Oil Fats (the wrong ones) Can Accelerate Cancer Growth
The medical journal, "Cancer Research" reported in February that
Omega-6 fatty acids accelerate the growth of human prostate tumors.
The current study found that the fats caused human prostate tumors in
cell culture to grow twice as quickly as tumors to which omega-6 fats
had not been added. Omega-6 fatty acids are found in vegetable oils,
including:
• Corn
• Canola
• Soybean
• Sunflower
Americans currently consume over 25 times more
omega-6 fats as the much more beneficial omega-3 fatty acids.
Therefore, most people are deficient in Omega-3. Further, the
researchers pointed out that the rate of prostate cancer in the
United States has increased steadily along with intake of omega-6,
suggesting a possible link between diet and prostate cancer.

Polyunsaturated fats is a general term that refers to fats that are
primarily not saturated like most tropical oils (such as coconut oil)
are. Nearly all vegetable oils contain primarily omega-6
polyunsaturated fats. Aggressive marketing campaigns by the U.S.
edible oil industry have sought to demonize tropical oils (and butter)
and promote their own vegetable oils like corn, soybean and canola oil.

While some omega-6 fats are necessary in the diet, we don't require
very much and deficiencies are very rare as they are so easy to obtain
in foods. About the only time Omega-6 deficiencies are seen clinically
is in someone who is restricted to IV feedings and is not receiving
supplemental fats. (And doesn't that speak volumes for our medical
system!!!!)
Nearly anyone eating regular food will not be deficient in omega-6
fats. The problem is the excess of these fats and nearly all of them
are highly processed (with very high temperatures) and consumed as
extracted vegetable oils. Many of them contain trans fats, all are
bleached and contain few to none of the natural nutrients they should
provide (as they would before processing or compared to a cold-pressed
oil like extra-virgin olive oil).
About 100 years ago the average person ate less than a pound of
these oils per year. Now people in most industrialized societies
consume around 75 pounds per year.
AND... these vegetable oils become even more dangerous when they're
heated for cooking. Damage done by frying starts at about 320 degrees
Fahrenheit and goes up exponentially as the temperature rises.
(This is why baking is much healthier than frying.) The nature of
chemical reactions is that for every 10-degree rise in temperature,
the rate of chemical reactions (with oxygen, light and metals) at
least doubles, and may even triple or quadruple.
Omega-6 oils such as canola and sunflower oil are not safe foods or
health foods, whatever you may have heard. Excessive consumption of
these vegetable oils can lead to:
• Asthma
• Blindness
• Heart disease
• Cancer
It is difficult to avoid excessive intake if you eat processed foods,
since these oils are present in nearly all of them.
If you want to protect yourself from breast or prostate cancer, try
taking these following sensible steps:
• Avoid processed foods, which frequently contain heated vegetable
oils and other
dangerous ingredients.
• If you must cook with oil, use coconut oil or butter. Despite the
bad reputation of
saturated fats, they are actually better for cooking
because they are far less damaged
by the heating process.
• Make a spread by combining butter and olive oil. Combine 1/2 olive
and 1/2 butter in
your mixer. Keep this in the fridge as a spreadable
"butter" with half the saturated fat
as butter. This can also be used
for saute'ing
• Optimize your vitamin D levels, and get plenty of sunlight.
Deficiencies in your Vitamin
D levels can increase your risk of
prostate cancer, breast cancer and autoimmune
disease.
• Eat your vegetables raw. This prevents the valuable, delicate and
health-protecting
micronutrients in vegetables from being destroyed.
McDonald's French Fries Have More Trans Fats Than Ever Before
McDonald's recently announced that its French fries contain a third
more trans fats than was previously thought. Each serving of fries
contains 8 grams of trans fat, rather than 6, and the total fat
content is 30 grams rather than 25.
As Little as Possible
Trans fats are believed to cause cholesterol problems, heart disease,
type 2 diabetes and contribute to dozens and dozens of other health
problems. Dietary guidelines issued by the U.S. government advise
people to consume as little trans fat as possible.
Americans now spend more money on fast food than on higher education,
personal computers, computer software, or new cars. The average
American spends 90 percent of their food money on processed food, and
many wonder why we have an epidemic of chronic degenerative disease.
If these statistics are surprising to you, I would encourage you to
read "Fast Food Nation" by Eric Schlosser. It is a fascinating read
and a great expose on McDonald's. The following facts are taken from
the book:
In 1968 McDonald's had 1,000 restaurants, today it has about 30,000
and opens 2,000 new ones each year. In fact, McDonald's is the largest
owner of retail property in the world. The company earns most of its
profit from collecting rent, not from selling food.
McDonald's is the nation's largest purchaser of:
• Beef
• Pork
• Potatoes
It is also the second largest purchaser of chicken.
The impact of McDonald's is hard to overstate. The golden arches are
now more widely recognized than the Christian cross. (Anybody see
SuperSize Me? If you haven't... you NEED to rent it or see it
somewhere!!)
It appears that the promise McDonald's made to find a safer oil to
rid its foods of trans fats has been long forgotten.
From a nutritional standpoint, all the chemicals contained in a
single French fry may be more harmful to you than smoking a cigarette,
which is fries makes the list of the five worst foods you could
possibly consume.
Trans fat is one of the worst "foods" you can put in your body and
should be strictly avoided at all costs. Trans fats have only been
around for the last 100 years, introduced as an artifact of the food
processing industry. Ninety percent of trans fats are hidden. They
are in many of the processed foods Americans eat, not just margarine.
Trans fats lead to a major increase in cancers, arthritis, fatigue
and nearly all chronic illnesses. Trans fats are also an enormous
instigator of diabetes, which is dramatically increasing. The recent
statistics show that over 16 million Americans have diabetes, and it
is becoming an epidemic largely due to the shift in our food choices.
Thyroid Info: Ashwaganda and Guggul
I commonly hear about low thyroid problems among the people I work
with. The root is often long term stress combined with poor diet (low
in minerals) to support the thyroid.
Ayurvedic herbs like ashwagandha (Withania somnifera), guggul
(Commiphora mukul), and kachnar (Bauhinia purpurea) can actually
stimulate your body to produce thyroid hormones on its own again. An
Indian study supports the use of ashwagandha and kachnar for
hypothyroidism. (Panda S, Kar A. J Pharm Pharmacol. 1998
Sep;50(9):1065-8. Changes in thyroid hormone concentrations after
administration of ashwagandha root extract to adult male mice.)
Ashwagandha is found in my VitalSource PS Plus product which I
recommend for low thyroid functioning because it's primary ingredient
phosphatidylserine, lowers cortisol, the stress hormone. This helps
other hormones and glands return to normal.

In addition, you should limit your consumption of raw broccoli,
cabbage, cauliflower, millet, mustard, peanuts, pine nuts, soy, and
turnips to once a month. These foods block your body's ability to use
iodine, which it needs to make thyroid hormones. (Cooking them lessens
this effect)
You may also want to eat iodine-rich foods like kelp, nori, and other
seaweeds as often as once a day, and fish two or three times a week.
Also use sea salt which naturally contains iodine and a mineral
supplement such as coral minerals, which provides all the minerals
the body needs (Afterall, that's what we are made of!).

IN BETH'S KITCHEN...
I came across this recipe on line - sounds a lot like my wild rice
stuffing I make at holiday time.
(just add chopped celery and chopped cranberries - dried or fresh)
Orange Wild Rice (In the Crockpot)
1 1/2 cups wild rice (or wild and brown rice mix)
3 cups vegetable OR chicken broth
3 Tbs grated orange peel or 1 Tbs dried orange peel
4 Tbs fresh orange juice - or 1 1/2 Tbs frozen orange juice concentrate
1 tsp sea salt
1 Tbs butter
1/2 to 3/4 cup chopped pecans, to your taste, toasted
1/4 cup chopped scallions (green onions)
1/2 cup packed chopped fresh Italian parsley leaves
Rinse the wild rice mix in a strainer under cold running
water. In a slow cooker, combine the rice, broth, orange
zest and juice, salt and butter. Cover, set on High and
cook until the kernels are open and tender, but not mushy
for 2-3 hours. Stir in the pecans, scallions and parsley
and serve. Serves 6-8.
A New Egg Bake Recipe
(modified from my friend Tami)

Broccoli Egg Bake
10 eggs
3/4 cup milk
1/4 cup melted butter (1/2 stick)
3 cups cottage cheese ( I sometimes add a few tablespoons of sour
cream or cream cheese)
1/3 cup whole wheat flour
2 cups grated cheese (colby or monterey jack are especially good)
sea salt
pinch of thyme
pinch of crushed red pepper and ceyenne pepper
about 3 cups chopped fresh broccoli
(can use frozen, but fresh is better)
Pour into buttered baking dish, 8 x 10
Bake in preheated oven, 350 degrees for about 45 minutes.
Serve with fresh whole grain bread any time of day.
Serves about 8

Put ye in the sickle, for the harvest is ripe: come, get you down; for
the press is full, the fats overflow; for their wickedness is great.
Multitudes, multitudes in the valley of decision: for the day of the
LORD [is] near in the valley of decision. (3:13-14)
The LORD also shall roar out of Zion, and utter his voice from
Jerusalem; and the heavens and the earth shall shake: but the LORD
[will be] the hope of his people, and the strength of the children of
Israel.
So shall ye know that I am the LORD your God dwelling in Zion, my holy
mountain: then shall Jerusalem be holy, and there shall no strangers
pass through her any more.
And it shall come to pass in that day, that the mountains shall drop

This reminded me of a prophetic word recently released by Kim Clement
on the Elijah list.

I believe that March will indeed bring a new season and I pray the
abundance of God's rain will fall on His people - all of you - That
lack, debt, depression, sickness will be lifted from God's Holy people!
